This week, Darren made a Calamari Spring Salad for me to try (romaine lettuce & calamari in a mandarin vinaigrette as well as toasted almonds, cranraisins, mandarins, apples and chow mein noodles). I found it interesting how he made the vinaigrette; he used mandarin juice, and other ingredients but I thought it was odd when he told me you can use mayonnaise or even mustard to thicken the vinaigrette but instead he put the mandarins in the food processor and added them to the mixture. After that, we both made pasta in a diablo sauce which is just fancy name for a hot tomato sauce. I enjoyed both of the meals, they had unique tastes but I still have yet to master the sauteing techniques.
